Designation of Origin Rueda.
Location of the vineyards: In La Seca, within Castilla
y León in north-west Spain.
Bodegas: Ageing is carried out in an underground cave dug
by hand underneath a Mudejar house and in which wine has been
made and aged for centuries. It is at a depth of 12 metres, leading
to a relatively steady temperature (13º-15°C). Its relative
humidity is high and it is noise-free, making the wine in the
barrels age slowly under optimal conditions.
The land: The daytime temperature is high and the nighttime
temperature is very low, alluvial land, gravel terraces, great
depths, open sandy texture and basic pH. All of this means that
the temperature of the vine roots remains fresh during the day
and warm at night.
The grape: The grape is collected at night to avoid sharp
changes in temperature. Herbicides or chemical fertilisers are
not used.
